Add the chopped onion and minced garlic, and saut\u00e9 until softened, about 5 minutes.<br>Add the chopped eggplant flesh to the skillet and cook until it starts to soften, about 5-7 minutes.<br>Stir in the diced tomatoes (with their juices), cooked quinoa or rice, dried basil, dried oregano, salt, and pepper. Cook for another 5 minutes, allowing the flavors to meld together.<br>Place the hollowed-out eggplant halves in a baking dish. Spoon the filling mixture evenly into each eggplant half.<br>In a small bowl, combine the breadcrumbs and crumbled feta cheese.
