{"id":1962,"date":"2026-03-11T11:29:57","date_gmt":"2026-03-11T11:29:57","guid":{"rendered":"https:\/\/esfriv.com\/?p=1962"},"modified":"2026-03-11T11:29:58","modified_gmt":"2026-03-11T11:29:58","slug":"spanish-baked-cod-with-paprika","status":"publish","type":"post","link":"https:\/\/esfriv.com\/?p=1962","title":{"rendered":"Spanish Baked Cod with Paprika"},"content":{"rendered":"\n<p>Spanish Baked Cod with Paprika<\/p>\n\n\n\n<p><strong>Serves 4<\/strong><\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Ingredients:<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>4 cod fillets (about 6 oz each)<\/li>\n\n\n\n<li>3 tbsp olive oil<\/li>\n\n\n\n<li>3 garlic cloves, minced<\/li>\n\n\n\n<li>1 tsp smoked paprika (piment\u00f3n)<\/li>\n\n\n\n<li>\u00bd tsp sweet paprika (optional for extra depth)<\/li>\n\n\n\n<li>1 tsp ground cumin<\/li>\n\n\n\n<li>\u00bd tsp chili flakes (optional, for a little heat)<\/li>\n\n\n\n<li>1 lemon (zest + juice)<\/li>\n\n\n\n<li>1 medium onion, thinly sliced<\/li>\n\n\n\n<li>1 red bell pepper, sliced into strips<\/li>\n\n\n\n<li>1 yellow bell pepper, sliced into strips<\/li>\n\n\n\n<li>2 medium tomatoes, chopped (or 1 can diced tomatoes, drained)<\/li>\n\n\n\n<li>Fresh parsley, chopped (for garnish)<\/li>\n\n\n\n<li>Salt &amp; black pepper, to taste<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">Instructions:<\/h4>\n\n\n\n<ol class=\"wp-block-list\">\n<li><strong>Preheat oven<\/strong>\u00a0to 400\u00b0F (200\u00b0C).<\/li>\n\n\n\n<li><strong>Prepare the seasoning oil:<\/strong>\u00a0In a small bowl, mix olive oil, garlic, paprika, cumin, chili flakes, lemon zest, and juice.<\/li>\n\n\n\n<li><strong>Arrange the veggies:<\/strong>\u00a0Spread sliced onion, bell peppers, and tomatoes in a lightly oiled baking dish. Season with a pinch of salt and pepper.<\/li>\n\n\n\n<li><strong>Season the cod:<\/strong>\u00a0Pat dry the fillets, then place them on top of the veggies. Brush or drizzle with the paprika oil mixture.<\/li>\n\n\n\n<li><strong>Bake:<\/strong>\u00a0Cover loosely with foil and bake for\u00a0<strong>15 minutes<\/strong>.
