Cheese Shrimp Penne Pasta & Spinach

Ingredients1 box penne pasta, cooked as directed1 pound peeled shrimp, tails removed3 cups chopped fresh spinach1 Tbsp. minced garlic2 Tbsp. butter1 cup heavy cream1 cup shredded mozzarella3 tsp. olive oilHow To Make Cheese Shrimp Penne Pasta & SpinachPrepare the penne pasta according to package directions. Set aside.In a large sauté pan, drizzle olive oil and add the spinach with the minced garlic.Cook until tender.Add the cooked shrimp to the spinach and toss to combine.Add the pasta to the shrimp mixture, tossing to combine.In a small saucepan, add the heavy cream and bring to a boil.Add the mozzarella to the cream and stir until all of the cheese is melted.Pour the cheese sauce over the pasta mixture and toss to combine.Garnish and enjoy!
