🌊 Seafood Stuffed Baked Potatoes

Ingredients (serves 4):

4 large russet potatoes

2 tbsp butter

1 small onion, finely diced

1 clove garlic, minced

½ lb shrimp, peeled & chopped

½ cup lump crab meat (or imitation crab)

½ cup sour cream

½ cup shredded cheddar cheese (plus extra for topping)

¼ cup cream cheese, softened

2 tbsp milk (more if needed for creaminess)

1 tsp Old Bay seasoning (or Cajun seasoning)

Salt & black pepper, to taste

2 tbsp chopped green onions (for garnish)

Optional: a squeeze of lemon juice for brightness

Instructions:

1. Bake the potatoes:

Preheat oven to 400°F (200°C). Scrub potatoes, pierce with a fork, rub with a little oil and salt. Bake 1 hour or until tender.

2. Cook the filling:

In a skillet, melt butter. Sauté onion and garlic until soft. Add shrimp and cook until just pink (2–3 minutes). Stir in crab meat, seasoning, salt, and pepper. Remove from heat.
