Easy Dairy-Free Vanilla Cinnamon Dessert

Ingredients

  • 4 cups (1 liter) dairy-free milk (almond, oat, soy, or coconut milk)
  • ½ cup cornstarch
  • ½ cup sugar (adjust to taste)
  • 1 teaspoon vanilla extract
  • Ground cinnamon for topping

Instructions

  1. In a saucepan, combine the cornstarch and sugar.
  2. Gradually pour in the dairy-free milk while whisking until completely smooth.
  3. Place the saucepan over medium heat and cook, stirring constantly.
  4. Continue stirring until the mixture thickens into a smooth, creamy pudding.
  5. Remove from heat and stir in the vanilla extract.
  6. Pour the mixture into a serving dish or individual dessert cups.
  7. Allow it to cool slightly, then refrigerate for at least 2 hours until fully set.
  8. Before serving, generously dust the top with ground cinnamon.
