JAMAICAN FLOWER JELLY WITH CINNAMON AND CLOVES

Ingredients

  • 2 cups dried Jamaican flower (hibiscus/calices)
  • 4 cups water
  • 1 cinnamon stick
  • 4–5 whole cloves
  • 3 cups sugar
  • 2 tbsp lemon juice
  • 1 packet (about 7 g) unflavored gelatin (or 1 tbsp agar-agar for a vegetarian version)

Instructions

  1. Bring the water to a boil and add the hibiscus flowers, cinnamon stick, and cloves.
  2. Simmer for 10–15 minutes until the liquid turns a deep red color.
  3. Remove from heat and strain the mixture.
  4. Return the strained tea to the pot and stir in the sugar and lemon juice.
  5. Sprinkle in the gelatin and whisk until completely dissolved.
  6. Pour the mixture into molds or small serving glasses.
  7. Refrigerate for 3–4 hours, or until fully set.

Serving Tip

Serve chilled and garnish with fresh mint leaves, fruit slices, or a sprinkle of cinnamon for an elegant dessert.
