Ingredients
- 2 cups dried Jamaican flower (hibiscus/calices)
- 4 cups water
- 1 cinnamon stick
- 4–5 whole cloves
- 3 cups sugar
- 2 tbsp lemon juice
- 1 packet (about 7 g) unflavored gelatin (or 1 tbsp agar-agar for a vegetarian version)
Instructions
- Bring the water to a boil and add the hibiscus flowers, cinnamon stick, and cloves.
- Simmer for 10–15 minutes until the liquid turns a deep red color.
- Remove from heat and strain the mixture.
- Return the strained tea to the pot and stir in the sugar and lemon juice.
- Sprinkle in the gelatin and whisk until completely dissolved.
- Pour the mixture into molds or small serving glasses.
- Refrigerate for 3–4 hours, or until fully set.

Serve chilled and garnish with fresh mint leaves, fruit slices, or a sprinkle of cinnamon for an elegant dessert.
