Carrot Cake Roll with Cream Cheese Swirl
Instructions:
Prepare the Coconut Base:
In a mixing bowl, combine shredded coconut, almond flour, cocoa powder, maple syrup or honey, melted coconut oil, vanilla extract, and a pinch of salt.
Mix until well combined and the mixture holds together.
Press into a Pan:
Line an 8×8 inch baking dish with parchment paper.
Transfer the coconut mixture into the lined dish and press it down evenly to form a compact layer. Use the back of a spoon or your hands to smooth it out.
Chill the Base:
Place the baking dish in the refrigerator while you prepare the chocolate topping. Let it chill for at least 30 minutes to firm up.
Make the Chocolate Topping:
In a microwave-safe bowl or using a double boiler, melt the dark chocolate chips and coconut oil together until smooth, stirring frequently.
Pour Over the Base:
Remove the baking dish from the refrigerator and pour the melted chocolate mixture evenly over the chilled coconut base. Use a spatula to spread it out to cover the entire surface.
Chill Until Set:
Return the baking dish to the refrigerator and chill for another 1-2 hours, or until the chocolate layer is completely set.
Slice and Serve:
Once set, lift the bars out of the dish using the parchment paper edges.
Cut into bars or squares with a sharp knife.
