Ingredients:
For the Bread:
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 cup unsalted butter, softened
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup plain yogurt or sour cream
2 cups peeled and diced apples (about 2 medium apples)
For the Cinnamon Swirl:
1 tablespoon ground cinnamon
1/4 cup granulated sugar
Instructions:
Preparation:
Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan, or line with parchment paper.
Mix Dry Ingredients:
In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
Cream Butter and Sugar:
In a large bowl, using a hand mixer or stand mixer fitted with paddle attachment, cream together butter and sugar until light and fluffy.
Add Eggs and Vanilla:
Beat in eggs one at a time, scraping down sides of bowl as needed. Mix in vanilla extract until combined.
Alternate Mixing:
Gradually add dry ingredients to wet ingredients, alternating with yogurt (or sour cream), beginning and ending with dry ingredients. Mix until just combined.
Fold in Apples:
Gently fold in diced apples until evenly distributed throughout batter.
Prepare Cinnamon Swirl:
In a small bowl, mix together 1/4 cup granulated sugar and 1 tablespoon ground cinnamon for cinnamon swirl mixture.
Layer and Swirl:
Spoon half of batter into prepared loaf pan. Sprinkle half of cinnamon swirl mixture over batter. Add remaining batter on top, then sprinkle remaining cinnamon swirl mixture over batter.
Swirl Effect:
Use a knife or skewer to gently swirl cinnamon mixture through batter, creating marbled effect.
Bake:
Bake in preheated oven for 50-60 minutes, or until toothpick inserted into center of loaf comes out clean.
Cool and Serve:
Allow loaf to cool in pan for 10-15 minutes, then transfer to wire rack to cool completely before slicing.
