1/4 cup heavy cream
1 cup finely chopped pecans
1/4 cup unsalted butter
1/2 cup powdered erythritol (or your preferred keto-friendly sweetener)
1 teaspoon vanilla extract
Pinch of salt

Instructions:

In a medium-sized saucepan over medium heat, toast the chopped pecans until they are fragrant and lightly browned, stirring occasionally. This should take about 3-5 minutes. Remove from heat and set aside.
In the same saucepan, melt the unsalted butter. Once melted, add the heavy cream and powdered erythritol. Stir until the erythritol is fully dissolved and the mixture is smooth.
Bring the mixture to a gentle boil, stirring constantly. Let it boil for about 3-4 minutes until it thickens slightly.
Remove the saucepan from the heat and stir in the vanilla extract and a pinch of salt.
Quickly add the toasted pecans to the mixture and stir until they are evenly coated.
Using a spoon or cookie scoop, drop small portions of the mixture onto a parchment-lined baking sheet. Allow them to cool and harden at room temperature for about 30-60 minutes.
