Creamy Lime Mousse

Ingredients:

1/2 cup powdered sugar
Zest of 2 limes
1 cup heavy cream
1/3 cup freshly squeezed lime juice (about 4-5 limes)
1 teaspoon gelatin powder
2 tablespoons cold water

Instructions:

Prepare Gelatin: In a small bowl, sprinkle gelatin over cold water. Let it sit for 5 minutes to soften.

Whip Cream: In a large mixing bowl, whip the heavy cream until it starts to thicken. Gradually add powdered sugar while continuing to whip until stiff peaks form. Set aside.

Lime Mixture: In another bowl, combine lime juice and lime zest.

Dissolve Gelatin: Microwave the gelatin mixture for 10-15 seconds until fully dissolved. Alternatively, dissolve it over a double boiler.

Combine: Gradually add the dissolved gelatin into the lime juice mixture, stirring constantly.

Incorporate: Carefully fold the lime mixture into the whipped cream using a spatula. Mix gently until fully combined.

Chill: Spoon the mousse into serving glasses or bowls. Cover and refrigerate for at least 2 hours, or until set.
