Sautéed Cabbage with Crispy Bacon and Caramelized Onions

Ingredients:

6 slices of bacon, chopped
1 large onion, thinly sliced
1 small head of cabbage, thinly sliced
2 cloves garlic, minced
Salt and pepper to taste
Red pepper flakes (optional, for heat)
1 tablespoon olive oil or bacon fat

Instructions:

Cook Bacon: In a large skillet over medium heat, cook the chopped bacon until crispy. Remove bacon from the skillet and set aside, leaving the bacon fat in the skillet.

Caramelize Onions: Add olive oil or additional bacon fat to the skillet if needed. Add the thinly sliced onions and cook over medium-low heat, stirring occasionally, until onions are caramelized and golden brown, about 15-20 minutes.

Add Garlic and Cabbage: Add minced garlic to the skillet with the caramelized onions. Stir and cook for 1-2 minutes until fragrant. Add the thinly sliced cabbage to the skillet in batches if necessary, stirring well after each addition. Cook until cabbage is tender yet still slightly crisp, about 8-10 minutes.

Combine and Season: Return the crispy bacon to the skillet with the cabbage mixture. Season with salt, pepper, and red pepper flakes (if using), adjusting to taste.
