Warm and Wholesome Baked Apple Fritters

Ingredients:

1 tablespoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
2 cups all-purpose flour
1/2 cup granulated sugar
2 large eggs
1 cup milk
2 tablespoons melted butter
2 medium apples, peeled, cored, and diced (such as Granny Smith or Honeycrisp)
Vegetable oil for frying

Instructions:

Preheat your oven to 350°F (175°C). Grease a baking sheet or line it with parchment paper.
In a large mixing bowl, combine the flour, sugar, baking powder, cinnamon, and salt.
In another bowl, whisk together the eggs, milk, and melted butter until well combined.
Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; the batter should be slightly lumpy.
Gently fold in the diced apples until evenly distributed throughout the batter.
Using a spoon or cookie scoop, drop dollops of the batter onto the prepared baking sheet, leaving some space between each fritter.
Bake in the preheated oven for 12-15 minutes, or until the fritters are golden brown and cooked through.
While the fritters are baking, heat vegetable oil in a deep skillet or frying pan over medium heat.
Once the fritters are done baking, carefully transfer them to the hot oil using a slotted spoon. Fry for 2-3 minutes on each side, or until golden brown and crispy
