Ingredients:

4 cloves garlic, minced
1 onion, thinly sliced
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
1 cup cherry tomatoes, halved
2 cups fresh spinach leaves
8 oz wide rice noodles
1 lb Italian sausage, casings removed
1/2 cup dry white wine
1/4 cup chicken or vegetable broth
2 tablespoons olive oil
Salt and pepper to taste
Grated Parmesan cheese for garnish (optional)
Fresh basil leaves for garnish (optional)

Instructions:

Cook the rice noodles according to the package instructions. Drain and set aside.
In a large skillet, heat the olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it up into crumbles with a spoon.
Add the minced garlic and sliced onion to the skillet. Cook until the onion is translucent and fragrant, about 3-4 minutes.
Stir in the sliced bell peppers and cherry tomatoes. Cook for another 2-3 minutes until the vegetables are slightly softened.
Pour in the white wine and chicken or vegetable broth. Allow the mixture to simmer for 5-7 minutes to reduce slightly and blend the flavors.
Add the cooked rice noodles and fresh spinach leaves to the skillet. Toss everything together until the spinach wilts and the noodles are heated through.
Season with salt and pepper to taste.
Serve the Tuscan-inspired drunken noodles hot, garnished with grated Parmesan cheese and fresh basil leaves if desired
