Cheesy Potato Rolls with Crispy Cabbage

Ingredients:

1 cup finely chopped cabbage
1/2 cup diced carrots
4 large potatoes, peeled and diced
1 cup shredded cheddar cheese
1/2 cup diced bell peppers
4 slices bacon, cooked and crumbled (optional)
Salt and pepper to taste
1 package of dinner rolls dough

Instructions:

Preheat your oven to 375°F (190°C) and grease a baking dish.
Boil the diced potatoes until tender, then drain and mash them in a large bowl.
Stir in the shredded cheddar cheese until melted and well combined.
Add the chopped cabbage, carrots, bell peppers, and cooked bacon (if using) to the potato mixture. Season with salt and pepper to taste.
