Cheesy Baked Potato Slices

Ingredients:

1 cup shredded cheddar cheese
4 medium-sized potatoes
1/4 cup chopped green onions (optional)
2 tablespoons olive oil
Salt and pepper to taste

Instructions:

Preheat your oven to 425°F (220°C).
Scrub the potatoes clean and slice them into 1/4-inch thick rounds.
Place the potato slices in a pot of boiling water and cook for about 5-7 minutes until they are just tender.
Drain the potatoes and pat them dry with a paper towel.
Arrange the potato slices in a single layer on a baking sheet lined with parchment paper.
Drizzle olive oil over the potato slices and season with salt and pepper to taste.
Sprinkle the shredded cheddar cheese evenly over the potato slices.
If desired, sprinkle chopped green onions on top of the cheese.
Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly, and the edges of the potatoes are golden brown.
Remove from the oven and let cool for a few minutes before serving
