Ingredients:
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
1 egg
1 teaspoon garlic powder
4 large potatoes
1 pound ground beef
1 teaspoon onion powder
Salt and pepper, to taste
1 cup shredded mozzarella cheese
Chopped fresh parsley, for garnish (optional)

Instructions:
Preheat oven to 400°F (200°C).
Scrub potatoes and pierce each several times with a fork. Place on a baking sheet and bake for 45-60 minutes until tender.
While potatoes bake, prepare meatballs. In a bowl, mix ground beef, breadcrumbs, Parmesan cheese, egg, garlic powder, onion powder, salt, and pepper.
Shape mixture into small meatballs, about 1 inch in diameter.
In a skillet, heat oil over medium heat. Cook meatballs until browned and cooked through, about 8-10 minutes. Set aside.
Once potatoes are done, let cool slightly, then slice in half lengthwise and scoop out some flesh to create wells.
Fill potato wells with meatballs and top with shredded mozzarella cheese.
Return stuffed potatoes to oven and bake for 5-10 minutes until cheese is melted and bubbly.
Garnish with chopped parsley if desired, and serve hot
