Savory Herb Potato Casserole

Ingredients:

2 cloves garlic, minced
1 cup grated cheese (cheddar or your choice)
6 medium potatoes, thinly sliced
1 onion, thinly sliced
1 cup milk
2 tablespoons butter
2 tablespoons all-purpose flour
Salt and pepper to taste
Fresh herbs (rosemary, thyme, parsley) for garnish

Instructions:

Preheat your oven to 375°F (190°C). Grease a baking dish with butter or cooking spray.
Layer half of the sliced potatoes in the bottom of the baking dish. Top with half of the sliced onions and half of the minced garlic. Sprinkle with half of the grated cheese.
Repeat the layers with the remaining potatoes, onions, garlic, and cheese.
In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes until lightly golden.
Gradually whisk in the milk until smooth. Continue cooking, stirring constantly, until the sauce thickens, about 3-4 minutes. Season with salt and pepper to taste.
Pour the sauce evenly over the potato layers in the baking dish.
Cover the dish with aluminum foil and bake for 45 minutes.
Remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and the top is golden brown.
