1/2 cup boiling water
4 large eggs, separated
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk

1 cup granulated sugar
3 egg yolks, lightly beaten
1 cup evaporated milk
1/2 cup unsalted butter
1 teaspoon vanilla extract
1 1/3 cups sweetened flaked coconut
1 cup chopped pecans

Instructions:
Making the Cake
Melt the Chocolate
Break the chocolate into pieces and place in a heatproof bowl.
Pour boiling water over the chocolate and stir until fully melted. Allow to cool.
Prepare the Batter
In a large mixing bowl, cream together the butter and sugar until the mixture is light and fluffy.
Add the egg yolks one at a time, beating well after each addition.
Mix in the vanilla extract and the cooled, melted chocolate.
Mix Dry and Wet Ingredients
In a separate bowl, sift together the flour, baking soda, and salt.
Add the flour mixture to the chocolate mixture in batches, alternating with the buttermilk. Begin and end with the flour mixture, mixing until just combined.
Whip and Fold in Egg Whites
In a clean bowl, beat the egg whites until stiff peaks form.
Gently fold the beaten egg whites into the batter.
Bake the Layers
Preheat the oven to 350°F (175°C).
Grease and flour three 9-inch round cake pans.
Divide the batter evenly among the prepared pans.
Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely
