Instructions:
In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
In another bowl, whisk the eggs, milk, and melted butter until well combined.
Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the diced apples.
Heat vegetable oil in a deep fryer or heavy-bottomed pot to 350°F (175°C).
Using a small cookie scoop or spoon, carefully drop spoonfuls of batter into the hot oil. Fry until golden brown and cooked through, about 2-3 minutes per side.
Remove the fritters from the oil and drain on paper towels to remove excess oil.
In a small bowl, whisk together the powdered sugar, apple cider, cinnamon, and vanilla extract until smooth to make the glaze.
Dip each fritter bite into the glaze, coating it evenly, then place on a wire rack to set
