Ingredients:
1 large tomato, thinly sliced
4 slices of whole grain bread
4 mozzarella cheese slices
1/2 red onion, thinly sliced
Fresh basil leaves
Olive oil
Salt and pepper to taste

Instructions:
Begin by heating a pan over medium heat.
Drizzle olive oil on one side of each slice of bread.
Place two slices of bread, oil side down, on the pan.
Add a slice of mozzarella cheese on each slice of bread in the pan.
Layer the tomato slices, red onion slices, and fresh basil leaves on top of the cheese.
Sprinkle with salt and pepper to taste.
Top each sandwich with the remaining mozzarella cheese slices.
Place the remaining slices of bread, oil side up, on top of each sandwich.
Cook until the bottom of the bread is golden brown and the cheese starts to melt, about 3-4 minutes.
Carefully flip the sandwiches and cook until the other side is golden brown and the cheese is completely melted, about 3-4 minutes more.
Remove from the pan and serve immediately
