Instructions:

Preheat your oven to 275°F (135°C).
In a small bowl, combine the smoked paprika, ground cumin, chili powder, salt, and pepper.
Rub the spice mixture evenly over the pork roast, ensuring it’s well coated on all sides.
Place the seasoned pork roast in a roasting pan or Dutch oven.
Roast the pork in the preheated oven for about 4-5 hours, or until it reaches an internal temperature of 145°F (63°C) for medium doneness.
Once cooked, remove the pork from the oven and let it rest for 15-20 minutes to allow the juices to redistribute.
Slice the pork roast and serve warm, garnished with your favorite herbs or alongside your choice of sides
