Instructions:
Preheat your oven to 350°F (175°C) and grease a muffin tin or line with muffin liners.
In a skillet over medium heat, cook the ground sausage until it’s browned and fully cooked. Drain any excess grease and set aside to cool slightly.
In a mixing bowl, whisk together the eggs until well beaten. Season with salt and pepper to taste.
Stir in the cooked sausage and shredded cheese into the egg mixture until evenly combined.
Pour the mixture evenly into the prepared muffin tin, filling each cup about 2/3 full.
Bake in the preheated oven for 20-25 minutes, or until the muffins are set and lightly golden on top.
Remove from the oven and let them cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.
