Instructions:

Preheat Your Oven: Set your oven to 425°F (220°C) to get it nice and hot.

Prep the Potatoes:

Rinse and optionally peel the potatoes.
Slice them into thin sticks, approximately 1/4 inch thick, to ensure even baking.
Parboil the Potatoes:

Fill a large pot with water and bring it to a boil.
Add the potato sticks and let them parboil for 4-5 minutes to start the cooking process and enhance crispiness.
Drain well and allow them to dry in the colander or pat them with a kitchen towel.
Coat with Seasonings:

Place the dried potato sticks in a large bowl.
Add the cornstarch, paprika, garlic powder, salt, and pepper.
Toss the potatoes thoroughly to coat them evenly with the mixture.
Prepare for Baking:

Line a baking sheet with parchment paper or a silicone baking mat.
Arrange the potato sticks on the sheet in a single layer, ensuring they are spaced apart to avoid steaming.
