1 onion, sliced
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
1 tablespoon olive oil
4 boneless, skinless chicken breasts
2 bell peppers (red, green, or yellow), sliced
1 teaspoon garlic powder
1 teaspoon paprika
Salt and pepper to taste

Instructions:

Preheat your oven to 375°F (190°C) and grease a baking dish with olive oil.
Season chicken breasts with garlic powder, paprika, salt, and pepper.
In a skillet over medium heat, add olive oil and cook chicken breasts until they are browned on both sides and cooked through, about 6-8 minutes per side. Remove from skillet and set aside.
In the same skillet, add sliced bell peppers and onion. Cook until they are tender, about 5-7 minutes.
Arrange cooked chicken breasts in the greased baking dish. Top each breast with cooked peppers and onions.
Sprinkle shredded cheddar and mozzarella cheese over the chicken and vegetables.
Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly
