Ingredients:
4 ounces (about 1 cup) of shredded cheese (cheddar, Gruyère, Swiss, or a blend)
4 slices of artisanal bread (sourdough, ciabatta, or your favorite)
2 tablespoons unsalted butter, softened
Optional: 2 slices of cooked bacon, sliced tomatoes, caramelized onions, avocado slices, or any other desired toppings
Creamy Mozzarella Cheese Slice Sandwich

Instructions:
Preheat a skillet or griddle over medium heat.
Spread a thin layer of butter on one side of each slice of bread.
Place two slices of bread, buttered side down, onto the skillet or griddle.
Sprinkle each slice with a generous amount of shredded cheese.
If using any additional toppings, layer them on top of the cheese.
Place the remaining slices of bread on top, buttered side up.
Cook for 3-4 minutes, or until the bottom bread is golden brown and crispy.
Carefully flip the sandwiches using a spatula, and continue cooking for another 3-4 minutes, or until the other side is golden brown and the cheese is melted.
Remove from the skillet or griddle and let cool for a minute before serving
