Instructions:
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Roll out the puff pastry sheet onto the prepared baking sheet.
In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
Add the thinly sliced zucchinis to the skillet. Season with dried thyme, dried oregano, salt, and black pepper. Cook for 3-4 minutes until the zucchinis are slightly softened.
Arrange the cooked zucchini slices on top of the puff pastry, leaving a border around the edges.
Sprinkle shredded Gruyere cheese evenly over the zucchini slices.
Fold the edges of the puff pastry over the filling, creating a rustic border.
Brush the edges of the pastry with olive oil for a golden finish.
Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and crisp.
Remove from the oven and let cool for a few minutes before slicing.
Garnish with fresh chopped parsley before serving
